Soba noodles in Asian Sauce

This is my idea of a light dinner. Easy, healthy and fast.  Some recipes are just too good and fun to share.

Soba noodles with fresh sauteed vegetables with a ginger and soy sauce is one of them.

Made from buckwheat flour, soba noodles have a nutty flavor. Dried soba noodle  look like dry spaghetti and is usually light beige to dark brown gray color.

Soba noodles serve in a light asian sauce and colorful vegetables is not only a pretty dish but also very tasty one.

Soba noodles in Asian Sauce

This is the kind of dish that is very forgiving. You can use  any of your favorite vegetables.

Add tofu, shrimp, chicken or any of your favorite protein.

Soba Noodles with Sauteed Vegetables and Asian Ginger Sauce

Ingredients
  • 1 paquet 9 (oz) Soba Noodles
  • 1 Tablespoon sesame oil
  • ½ red bell pepper, seeded and julienne
  • ½ red onion, thinly sliced
  • ½ zucchini julienne
  • 1 carrot peeled and julienne
Asian ginger sauce
  • 1 cup finely chopped scallions
  • 2 Tablespoons fresh ginger, thinly sliced
  • 1 clove garlic, minced
  • ¼ cup cilantro
  • 2 teaspoon chili oil
  • 1 Tablespoon soy sauce
  • 2 Tablespoons rice vinegar
  • 1 teaspoon mirin
  • 1 teaspoon honey
Instructions
  1. Cook the noodle according to the package instruction. Drain and set aside.
  2. In a bowl, mix all the ingredients for the asian sauce and set aside.
  3. Heat a large skillet or a wok over medium-high heat. Add the oil. Add the pepper, onion, zucchini and carrot and stir fry for 1-2 minutes. Add the sauce and let it simmer for 2-3 minutes.
  4. Toss with the cooked noodles.
