Slow Cooker Italian Sausage and Peppers

It’s been a busy week, so I’m pulling out the slow cooker.  This delicious slow cooker Italian sausage and peppers recipe is the perfect “chuck-everything-in-and-walk-away” dish, especially if you have a crowd to feed.

Having a game night? Serve the mixture in a bun for a tasty and fun easy-to-serve meal. I’ve made this recipe many times, and it’s always a big hit. Turkey sausage is a great substitute for Italian sausage—it tastes just as good, but it’s a bit healthier.

This meal makes fabulous leftovers, too. (I’d even say it’s better the second time around!)

Slow Cooker Italian Sausage and Peppers
Serves: 8
  • 2 pounds Italian sausage, cut into 1-inch pieces
  • 1 medium onion, sliced
  • 1 can (14 ½ ounces) diced tomatoes
  • 1 can chicken broth
  • 1 red bell pepper, cut into ½–inch strips
  • 1 green bell pepper, cut into ½ -inch strips
  • 1 yellow bell pepper, cut into ½ - inch strips
  • 2 gloves garlic, minced
  1. Place all ingredients in a slow cooker, toss to coat.
  2. Cover and cook 8 hours on low or 4 hours on high.
  3. Serve over rice or pasta.
  4. Serves 8.
