Lentil and Sweet Potato Curry

I woke up this morning with a cold. All I could think about was a steamy bowl of lentils and vegetables.

This thick and hearty curry is packed with spicy flavor.

Lentil and Sweet Potato Curry

This curry dish is filled with protein from the small  lentils and  the beautiful orange color of the sweet potatoes bring some brightness to the dish. The spinach makes sure you get greens too!

Lentils are a type of legume, like beans and peas. They’re full of  fiber, protein, iron, potassium, folate. They’re tasty and hearty, and great  in fall and  winter, when you want to cook big pots of delicious  warm meals.

And even better, they freeze well.

Lentil and Sweet Potato Curry


Curry and lentils pair well together. The bright heat of curry balances the earthy depth of the lentils. You can add in all kinds of other vegetables, but leafy greens fit right in, bringing some color.

Serves: 4
  • 1 cup lentils, rinsed
  • 4 cups vegetable broth
  • 2 medium sweet potatoes, peeled and diced.
  • 1 teaspoon turmeric
  • 1 teaspoon curry powder
  • 1 - 14.5 ounce can fire roasted tomatoes
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small shallot, minced
  • 1 jalapeno, ribs and seeds removed, minced
  • 2 teaspoons fresh minced ginger
  • 1 cup fresh spinach
  • salt and pepper to taste
  • Fresh Cilantro
  1. Pour lentils, broth, and sweet potatoes into a large pot. Bring to a boil and then simmer on low for 30-45 minutes, or until lentils and sweet potatoes are just barely done cooking. Add the turmeric,curry powder, tomatoes to the pot and cook for another 10 minutes.
  2. Heat the oil in a large skillet. Add garlic, shallot, jalapeno and ginger.. Sauté for 2-3 minutes. Add the spinach and cook for 5 minutes.
  3. Add spinach mixture to the lentil and stir. Season with salt and pepper. Top with cilantro.
