Vegan Blueberry and Cream Tart

 

I love making raw dessert because it is simple and spectacular. No need to bake, few dishes to wash et voila!

When entertaining, I want my guests to try something different.  For most of my friends, having raw dessert is a new experience.

This blueberry and cream tart is delicious and healthy.

When in season, blueberries are juicy and colorful.

Blueberry picking is a fun way to get the freshest blueberries.

 

These treasures are packed with antioxidants.

Raw Blueberry and Cream Tart

Ingredients
  • CRUST
  • 3 cups pecans
  • 4-6 soft dates
  • 1 Tablespoon agave syrup
  • 1 Teaspoon vanilla extract
  • 1 tablespoon coconut oil
  • Pinch of salt
  • BLUEBERRY CREAM
  • 2 cups soaked cashew
  • 6 dates, pitted and soaked for 10 minutes
  • 4 tablespoons agave syrup
  • 2 Tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 3 cups fresh blueberries
  • ½ cup coconut oil
  • Pinch of salt
Instructions
  1. Add to food processor, the nuts and chop. Cut the dates into pieces. Add the date pieces, agave, vanilla, coconut oil,salt and chop until well mixed.
  2. Scrape the sides of the food processor as needed..
  3. The crust should be crumbly but sticky enough to hold a shape when pressed.
  4. Press the dough into a pie plate.
  5. Add to blender all ingredients except the coconut oil.
  6. Blend until smooth and creamy.
  7. Stop blending and add the coconut oil.
  8. Resume blending until well incorporated.
  9. Pour filling into the prepared crust and place into the refrigerator.
