Cherry Tart with Almond Cream

Cherry Tart with Almond Cream

This tart can also be made with blueberries, raspberries or strawberries.  The cherries are in season and they are available  at the supermarket right now.

Long part of american history, cherries are truly an american favorite.  With his unique flavor, the red fruit has become a Super Fruit with an extensive list of heart health benefits.

Make the crust with nuts, dates and coconut oil. To change the flavor and texture, try using different varieties of nuts.

You can use almonds instead of the cashews to make the cream, but I prefer the creaminess of the cashews.

 

 

 
Ingredients
  • TOPPING
  • 6 cups cherries, stemmed and pitted
  • ⅓ cup agave syrup
  • 1 teaspoon vanilla extract
  • CRUST
  • 3 cups almond
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 4-6 soft dates, pitted,
  • 1 Tablespoon agave syrup
  • 2 Tablespoons coconut oil
  • FOR THE ALMOND CREAM
  • 2 cups raw cashews, soaked 2 hours or more
  • ⅔ cup agave syrup
  • ¼ cup water
  • 6 Tablespoons coconut oil
  • 1½ Tablespoons pure almond extract
  • 2 teaspoons vanilla extract
  • Pinch of salt
Instructions
  1. TOPPING
  2. In a medium bowl, toss the cherries with the agave and vanilla. Set aside for 2 hour.
  3. CRUST
  4. Break the dates in pieces. Add to food processor the nuts, salt, vanilla, and dates pieces.
  5. Process all ingredients until the crust starts to rise on the sides of the bowl. Stop and add the coconut oil and, agave.
  6. Repeat a few times until nuts are well broken down. Continue processing until the mixture is consistent.
  7. Grease the inside of the pans with coconut oil.
  8. Distribute crust evenly among the pans and lightly compact by hand.
  9. ALMOND CREAM
  10. In a blender, puree all the cream ingredients until completely smooth. Add more water if needed.
  11. Fill each tart crust with the cream. Refrigerated for about 2 hours.
  12. Remove the tart from the refrigerator and arrange the cherries on top and serve.
