White chocolate, Quinoa, and Dried Cherries Cookies

While smelling these white chocolate, quinoa and dried cherry cookies as they baked, I was reminded of the good aroma coming out of my mother kitchen as a child.

She was, and still is a great baker. I guess she inherited that from her family. My grand father was a baker.

Growing up, my mother always had something cooking on the stove or baking in the oven. Quinoa, whole wheat flour and yogurt were not common ingredients  in our house. Butter, white flour and sugar were the stars.

I have learned to use and appreciated healthier ingredients.

The use of quinoa in cookies adds a nutty flavor and a crunch.

The oats brings a tender and chewy texture to the cookies

White Chocolate, Quinoa and Dried Cherries Cookies
  • ½ cup quinoa flour
  • ½ cup millet flour
  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt
  • 11/2 Tablespoons chia seeds
  • ½ cup cane sugar
  • ¼ cup coconut oil
  • 1 egg
  • 1 cup plain greek yogurt
  • 1 teaspoon vanilla extract
  • ¾ cup white chocolate chips
  • 1 cup dried cherries, chopped
  1. Preheat oven to 375F. Line 2 baking sheets with parchment paper; set aside.
  2. In a bowl, combine the flours, oats, baking powder, baking soda, salt and chia seeds.
  3. In the bowl of a stand mixer, beat the coconut oil with the sugar until pale in color. Stir in the egg until well incorporated. Add the yogurt and vanilla. Mix well.
  4. Add the flour mixture to the wet ingredients; mix just until incorporated.
  5. Fold in the chocolate and dried cherries.
  6. Drop heaping tablespoons of batter onto the baking sheets. Leave a 2-inch spaces between the cookies.
  7. Place in the oven and bake 15 minutes or until the cookies are light golden in color..
  8. Remove from the oven and transfer the cookies with a spatula to a cooling rack.
  9. Make about 25 cookies

    Can’t wait to try these. I will substitute the coconut oil with applesauce only because my husband had a heart attack and can not have coconut oil. Will let you know how they turn out.
