Coconut Baked Oatmeal

Baked Oatmeal can be made ahead for a quick breakfast. You are going to love this dish. This baked oatmeal called for coconut milk, coconut flakes and fresh berries. A comforting dish with a tropical twist.

I love oatmeal in the morning and I am making different versions of it by combining some of my favorite ingredients.

Coconut milk  adds a creamy, tropical taste to the dish.

There has been increasing interest in oatmeal in recent years because of its health benefits. Daily consumption of a bowl of oatmeal can lower blood cholesterol  because of its soluble fiber  content.

Serve this Coconut Baked Oatmeal fresh from the oven for a morning brunch.

  • 2 cups rolled oats
  • ⅓ cup Florida Crystals (organic sugar)
  • 1½ teaspoon aluminum free baking powder
  • ½ teaspoon sea salt
  • 2 cups PureCoconut Milk (Silk)
  • 1 egg
  • 3 Tablespoons Coconut oil
  • 2 cups fresh berries ( raspberries, strawberries, blueberries)
  • 2 Tablespoons coconut flakes, toasted
Instructions
  1. Preheat oven to 350F. Generously spray the inside of an 8-inch square baking dish with cooking spray.
  2. In a bowl, mix together, the oats, the sugar, baking powder and salt.
  3. In another bowl, whisk together the coconut milk, egg and the coconut oil.
  4. Arrange 1½ cups berries in the bottom of the prepared dish. Cover the fruits with the oats mixture.
  5. Drizzle the milk mixture over the oats. Scatter the remaining berries on top.
  6. Bake for 30-35 minutes until the top is golden and the mixture has set.
  7. Sprinkle some coconut flakes on top and serve.
