Chicken Pot Pie Soup

This Chicken Pot Pie Soup is comfort food in a bowl.

The chunky soup is loaded with vegetables and chicken. This is like the classic chicken pot pie without the crust.

Chicken Pot Pie Soup

Filling, warm and delicious, this soup makes a wonderful meal. This is a great recipe to use some leftover chicken and some of your  vegetables.

Chicken Pot Pie Soup

Ingredients
  • 2 Tablespoons olive oil
  • 1 small onion, diced
  • 2 stalks celery, diced
  • 1 cup mushrooms, diced
  • ½ teaspoon dried thyme, crushed between fingertips
  • salt and pepper
  • 2 cloves garlic, minced
  • 3 medium carrots, cut into coins
  • 3 medium Yukon gold potatoes, peeled and cubed
  • 16 oz cooked chicken breast, diced small
  • ¼ cup all-purpose flour
  • 4 cups low-sodium chicken broth
  • ¾ cup frozen peas
  • 2 tablespoons fresh parsley, chopped
  • 1 cup milk
Instructions
  1. In a large saucepan, heat 2 Tablespoons olive oil on medium high heat. Add onion, celery, mushrooms, thyme and a dash of salt and pepper. Cook 5 minutes, stirring often, add garlic and cook another minute. Add carrots, potatoes, the cooked chicken and the flour.
  2. Stir in the chicken broth, frozen peas and parsley.
  3. Bring to a simmer and cook 25 minutes. Add more salt and pepper if needed. Stir in the milk, bring back to a simmer and cook 5-10 minutes.

    I’ve made this quite a few times and it’s absolutely amazing!! My husband and two sons LOVE it!!! Top it with some croutons and it really does taste just like a chicken pot pie! I always double it. It’s even better heated up! Yummy!!!

    Yum!! I make my own chicken pot pie (big dish) but have recently had to change to gluten free…this will make it easier for me to get the flavor but not the bad stuff…thank you!! (I know to switch flowers) If you have any other yummy tasting things that I can make I am open! Thanks for posting this!

    I’m not sure what I did wrong, but mine looks nothing like the picture. Mine is not thick at all. I added more spices and a little cheddar cheese. Tastes good now.

    Hi, I found your recipe on Pinterest. Looked perfect for a chilly fall evening. I followed your recipe exactly, but it did not get creamy at all like your picture. Did you do something else to thicken your soup? Thanks for sharing! It did have a good flavor. :) Looking forward to your answer so I can make this again.

    • Lauri, thank you for stopping by. I have used homemade chicken broth and I think that what gave a more robust flavor and a darker color. You can also use cream instead of milk. Bon Appétit!

    You can always mix a little cold or room temperature broth with some corn starch to thicken. I haven’t made this yet, but in other recipes, I have done this. I mix about 1/2 C broth with 2 Tbsp corn starch and then add a little at a time until reaching the desired thickness. We have a Halloween party every year and I make a variety of chilies and soups. This is going on the menu this year.

    It is -30 outside today (with windchill). My girls are home from school on a snow day but two of them are nursing very bad colds. So, as I was looking for a good “comfort” soup, I came across your recipe. I just made a pot of your soup and it is absolutely amazing! My family loves it! It is perfect!
