Apple, Yogurt and Granola Muffins. Made with quinoa, millet and brown rice flours, these muffins are very nutritious.

These muffins make an amazing breakfast or a great afternoon snack.  They are hearty, delicious and moist, they have the nutty crunch of the granola.

Healthy muffins are my favorite breakfast when I am in a hurry. Serve with Greek Yogurt and fresh berries, they keep me going during the day.

You can use store bought granola, but homemade is much healthier.

 

APPLE, YOGURT AND GRANOLA MUFFINS

  • 2 large eggs
  • ½ cup cane sugar
  • 6 Tablespoons unsalted butter, melted
  • ½ cup unsweetened apple sauce
  • ½ cup Greek yogurt
  • ½ cup quinoa flour
  • ¼ cup millet flour
  • ¼ cup brown rice flour
  • ½ teaspoon sea salt
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 cup granola
  • 2 apples, peeled, cored and diced
Instructions
  1. Preheat oven to 350F. Line a muffin pan with paper liners or use parchment paper cut in 5 inches square.
  2. In the bowl of a stand mixer, beat the eggs, with the sugar until light and pale in color.
  3. Reduce the speed and add the melted butter, applesauce and yogurt.
  4. In another bowl, combine the flours, salt, baking powder, and baking soda.
  5. Mix the dry ingredients into the wet ingredients, fold in the diced apples and the granola
  6. Divide the mixture among the muffins cases, and bake for 25 minutes or until a toothpick inserted in the middle comes out dry.
  7. Remove from the oven and cool completely.
