Apple Crisp with Pecan Topping! Delicious apples, dates, coconut oil.

Warm and comforting, apple crisp is ideal in the fall when apples are in season 

Possibly the best apple crisp and  I am not kidding.  Gluten-free, healthy and delicious. This Apple Crisp with Pecan Topping is addictive.

Delicious caramelized apples tossed with raisins, fall spices and maple syrup, and top with a mixture of pecans, dates and coconut oil for a rich fall flavor.

It smells heavenly while baking.

I have made a similar version for a client who is on a raw food diet.  Use the same recipe and leave it in the dehydrator for 3-4 hours.

I used Empire and Granny Smith apples for this recipe. Be sure to use firm apples when baking, they hold their shapes better when cooked.

Apple Crisp with Pecan Topping

Ingredients
  • 8 apples, peeled and diced
  • 2 tablespoons lemon juice
  • ½ cup raisins
  • ½ cup maple syrup
  • 1 teaspoon cinnamon
  • ¼ pumpkin pie spices
Topping
  • 2 cups pecans
  • ½ cup Medojol pitted dates
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon cinnamon
  • ⅛ teaspoon salt
Instructions
  1. Preheat oven to 375F.
  2. Peel, core and dice apples and toss them with lemon juice and raisins.
  3. In a small bowl, combine maple syrup and spices and sprinkle over the apples
  4. Spoon apple mixture into an 9 by 13 inch pan.
  5. For topping
  6. In a food processor, pulse pecans, dates, coconut oil, cinnamon, and salt until coarsely ground. Leaving some texture.
  7. Crumble the topping on top of the apple mixture and bake for 30-35 minutes.
