Healthy Blueberry Muffins

A delicious healthy alternative to traditional muffins, great for snack or breakfast.  These muffins are light and moist. Made with healthy ingredients, you get all the great flavor without the fat and the processed white flour.

Healthy Blueberry Muffins

Made with whole wheat pastry flour, oat bran, oats, wheat germ, and yogurt, these muffins are tender and healthy.

 

HEALTHY BLUEBERRY MUFFINS

  • 1½ cups whole wheat pastry flour
  • ¾ cup cane sugar
  • ¼ cup oat bran
  • ¼ cup quick cooking rolled oats
  • ¼ cup wheat germ
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 egg
  • 1 cup plain yogurt
  • 1 Tablespoon canola oil
  • 1 teaspoon vanilla extract
  • 1 cup blueberries
Instructions
  1. Preheat oven to 350F. Line 12 muffin cups with paper liners.
  2. In a mixing bowl, combine flour, sugar, oat bran, oats, wheat germ, baking powder, baking soda and salt.
  3. In another bowl, combine egg, yogurt, canola oil, and vanilla.
  4. Pour the wet mixture into the dry mixture and stir to combine. Gently fold in the blueberries.
  5. Spoon into the prepared muffin tin and bake until golden brown, about 20-25 minutes.
  6. Cool in a wire rack.
